Thank You Kansas Beef Council

    The seventh and eighth students of the Applied Technology classes at HMS are once again cooking with beef. The Kansas Beef Council has generously supplied our district with money in order to allow the students to explore the different recipes they can create with beef. The students have been learning time management, cooperation in the kitchen, kitchen safety, and how to read recipes as well making delicious dishes starring beef. Below are two of the recipes that the students have made in class.

 

Nacho Chip Casserole

 

Ingredients:

 

1 pound of ground beef

ground black pepper to taste

1 (10 ounce) can diced tomatoes with green chile peppers

1 (10.75 ounce) can condensed cream of mushroom soup

nacho-flavored tortilla chips

6 ounces of sliced cheese

 

Preheat oven to 350 degrees. Pepper the ground beef. Brown and drain ground beef. Stir in diced tomatoes and cream of mushroom soup.

 

Cover the bottom and sides of a 9x13 inch baking dish with tortilla chips. Pour in the meat mixture. Top with remaining tortilla chips and sliced cheese.

 

Bake 15 to 20 minutes, or until cheese is lightly browned.

 

Easy Mexican Calzone

 

1 refrigerated pie crust, room temperature

1 pound ground beef

1 (4 ounce) can diced green chiles

¼ cup water

½ package taco seasoning mix

1 cup shredded cheddar cheese, divided use

 

 

  1. Preheat oven to 425 degrees.
  2. Brown beef in large skillet; drain. Add chiles, water, and seasoning mix; mix well.
  3. Place pie crust on cutting board.  Place the  beef filling on half of the crust. Place  cheese on top of beef. Dampen edge of crust with water. Fold sides over filling; crimp edges with tines of fork. Place on ungreased baking sheet.
  4. Bake for 10 to 15 minutes or until golden brown. Garnish with sour cream and salsa.
